Highly Addictive Gluten-Free Oatcakes

*First off, let's get this straight: These aren't gluten free to be trendy. They are gluten free because, gluten has been associated with gut inflammation in so many research studies & consuming too gluten-contain things too often just leaves me feeling feel bloated and "yucky"---so, why not find alternatives?! If there's one thing you'll learn about me, is that I don't settle if there are better or more optimal options--some call it picky--I like to think of it as having high life standards ;) Sooooo, I just prefer to stay away form gluten most of the time.* 

Anywho, these are called oatcakes because they are made with oat flour, or in this case, whole oats blended up, in place of regular flour--which is what makes them gluten-free. They are low key famous in my friend circle because they are 1) healthy--literally completely clean 2) super easy to whip up 3) really satisfying--if you are craving pancakes, these will satisfy the craving 4) you can customize them to your heart's content. Think, banana oatcakes, PB oatcakes, coconut & vanilla oatcakes...But, my favorite is zee original version--Recipe Below! Some of you might notice this recipe looks reaaaal similar to this ;)

 

Ingredients: 

  • 1/2 cup gluten free oats 
  • 1 heaping tsp baking powder
  • Ground Cinnamon
  • 1/2 cup unsweetened apple sauce
  • 1/2 cup egg whites (Vegan sub: 1 tbsp flax or chia meal mixed with water)
  • 1/2 Tbsp Blue Agave Syrup (*optional but highly recommended) 
  • handful of frozen berries of choice (*) 
  • Individual or regular blender (I prefer the small, individual blenders of this recipe--more convenient)

Directions:

  1. Be ready for some major life hacking. You'll feel like your cheating...but you're not...your just winning. 
  2.  Grab your blender, a non-stick pan and spatula. 
  3.  Put berries into a microwave safe bowl and microwave for 1 minute/until no longer frozen. Time varies depending on microwave model. 
  4.  Add dry ingredients into blender first, then wet. 
  5.  You guessed it--BLEND. Blend until the mixture looks smooth/no whole oats are left. This usually takes my little blender 1 full minute. 
  6.  Pour 1/2 batter into a pan on medium heat & flip when you see bubbles forming nearing the edges of the pancake. Flip, take out once pancake has gotten fluffy/fully cooked, top with 1/2 of the berries.
  7.  Repeat ^^
  8.  Drizzle with agave syrup. 

 

Now, This is my idea of "treat yo self" food. They are really freaking good (i <3 fluffy carbs) but they won't leave you feeling like you have a rock in your stomach, nor will they trigger you to crave more sugar later on in the day like a stack of frozen pancakes will. All of this is important not just because refined sugar isn't all that healthy for you, but because of the way you'll feel. Eating right isn't a status symbol or something that should be reserved for "diets." Girl, since when don't you want to look & feel your best ALL the time? Mindset>>>shift.
